Jo is our fabulous Head Chef at The Kitchen and has worked for both The Kitchen and our sister company Indulgence for over 10 years. Jo has a wealth of experience and particularly loves the summer months when she can forage from The Kitchen gardens and Farnborough Lake.
What is your favourite thing to cook at The Kitchen?
I love working with desserts and pastry.
Your last supper – what would it be?
Really good fish and chips sitting on the quay at Brixham with lots of salt and vinegar but definitely no ketchup!
What is your favourite meal to cook at home?
Beef Wellington with Dauphinoise potatoes and creamed kale – my favourite to cook and eat! With a lovely bottle of red on the side, of course.
What is your favourite type of food?
I love Mediterranean food and I love The Kitchen garden herbs that can give a very British dish a Mediterranean twist.
Which is your favourite restaurant?
We had a team meal at the Wild Rabbit at Kingham and I loved it – especially the cocktails!
What inspired you to become a chef?
I always loved cooking cakes and biscuits as a child and it progressed from there! I actually wanted to be a vet but couldn’t face seeing animals in pain all the time.
Where was the favourite place you have ever worked?
Before I joined Anthony and Jo at The Kitchen and Indulgence, I worked at Ettington Park Hotel, where I started as a commis chef and worked my way up to Sous Chef. I enjoyed the variety and it was a great learning experience.
Who is the most famous person you have ever cooked for?
David and Victoria Beckham with Indulgence! (Not that Victoria ate much!)
Which chef do you most admire?
I loved Keith Floyd, I remember watching him on the television growing up and always had a glass of wine on the side.

What is your favourite hobby?
Reading – at the moment I am reading The Mistletoe Seller by Dilly Court, which I am loving!
What pets do you have?
I don’t have a pet but I love having Lola (The Kitchen’s resident dog) to stay on a little mini break!
What is your favourite meal on the menu at The Kitchen at the moment?
I love the Roast Cornish Cod, a light, summery and flavoursome dish. I also really like the Smoked Aubergine Curry which is packed full of flavour.
Where is your favourite holiday destination?
I love going to Turkey, Olu Deniz – the food there is incredible, especially the Mezze platters and I love sitting by the blue lagoon reading.
Which is your favourite band?
One luxury on a dessert island – what would it be?
A library – then you wouldn’t get bored.
One thing you would like to do but haven’t yet?
I would love to do a parachute jump! I am not frightened of heights and would love the challenge.
